Olympia Oyster (Ostrea lurida)

Pacific Northwest native oyster depleted to near extinction due to pollution and overharvesting.  Slowly returning to Puget Sound.  Excellent cocktail oyster, wonderful pan or deep fried.  A distinctive world class oyster. 

Pacific Oyster (Crassostrea gigas)Japanese native.  Savior of the Northwest oyster industry.  Extensively farmed throughout the world.  Great for half shell, fried, or in stews.  This oyster does it all! pacificoyster


manila_odd Manila Clam  (Tapes japonica)Japanese Littleneck.  Another Japanese native, “accidentally” imported from Japan with Pacific oyster seed.  Has flourished in Puget Sound since that time, and is the staple of the local shellfish industry.  Fabulous steamed, butterfly fried, or in chowder.

Native Littleneck Clam (Protothaca staminea)

Rock Clam.  Seasonally harvested, historically not harvested in months without “R’s” due to poor post harvest freshness.  When fresh a fine steamer, fried or in chowder.
